I am the biggest fan of polenta. If it’s on the menu at a restaurant then I order it. But I have to admit I’ve never been much good at cooking it…until recently. A few months ago I discovered Russ Parson’s oven-baked polenta recipe* and a whole new world opened up. It is rich and smooth and creamy and oh, so tasty. And it is easy, you just need to make sure you have enough time as it is not a quick recipe.
We eat it with all manner of sauces and accompaniments. One of our favourites is the sautéed greens dish above. Sauté garlic in a little olive oil, then add your broadbeans and finally your greens. Sauté until greens are nicely wilted. Add lemon juice, salt and pepper to taste. Serve with yummy oven-baked polenta and topped with roasted flaked almonds or pine nuts
*I’ve found you don’t need to bake the polenta for as long as Russ does. An hour for the main baking seems to work very well
