Party food

I love little kids’ parties.  Lots of running around and screaming and general happiness.  Lots of food.  All the food that you wouldn’t normally eat but because it’s a little kids’ party you get to… even if you’re a big kid.  Last weekend we went to a little kids’ party complete with sausage rolls and party pies, chocolate cake and hundred and thousand covered cupcakes.   I took along chocolate chip and sultana cookies.  They disappeared in the blink of an eye.

Chocolate chip and sultana cookies

  • 125 g butter, softened
  • 1 cup brown sugar, tightly packed
  • 1 tsp vanilla essence
  • 1 egg, lightly beaten
  • 1 ½  cups plain (all-purpose) flour
  • ½ tsp baking powder
  • ½ cup chocolate chips
  • ½ cup sultanas

1.          Preheat oven to 180 °C

2.          Beat butter and sugar until light and creamy

3.          Add vanilla and egg and beat lightly to combine

4.          Stir in flour and baking powder (if you used a small egg like me you may want to add 1 tbsp of milk at this point)

5.          Fold in chocolate chips and sultanas

6.          Form heaped teaspoons of mixture and place on greased baking trays. Flatten slightly with the back of the spoon

7.          Bake for 15-20 minutes.  Pale gold and they are chewy, deeper golden brown and they are crunchy

8.          Allow to cool on tray for a few minutes before placing on a wire rack to further cool

Go on, be wicked.  You know you want some…!

I made extra for us (too yummy to give them ALL away) and they have been a very yummy lunch box filler all this week. We ate the last ones for morning tea today

Yum they look good! And with the addition of sultanas I can keep telling myself that the cookies are healthy and good for me.
I always turn to Queen Nigella when it comes to party food – although her bar nut recipe is so morish that I eat far too much before people arrive!
