Lunch quest: tasty healthy pasta on the run

I’ve been experimenting a bit with what I take to work for lunch and this recipe is the all out winner so far.  It’s tasty, healthy and easy to prepare.

Prepare three containers to take to work:

1.          Left over pasta – here I used ricotta and spinach ravioli which is especially yummy

2.          A 2 cup container of finely chopped veggies – here I have mushrooms, silver beet, red onion and cherry tomatoes (yes, I know, not tomatoes in winter, they are my weakness! But while it’s not local, they are seasonal in Queensland where they were grown)

3.          A small container with about a tablespoon of grated parmesan cheese and a teaspoon of butter (chopped into little cubes)

Assemble your pasta dish at work

  • Place the vegies in a microwave safe bowl, add a dash of water and microwave for one minute
  • Toss the pasta through – microwave for 1 min, toss and place the butter cubes on top, microwave for a further minute. Toss
  • Place the grated cheese on top and microwave for about 45 seconds
  • Enjoy!  For something so simple it is incredibly yummy
